Carrot Poduthuval (Dry Carrot Curry) Recipe

Ingredients

1/2 kg carrots
1 teaspoon turmeric
1 teaspoon sugar
1 salt; to taste --for seasoning-
1 teaspoon black mustard seeds
2 teaspoon black gram dal
2 red chiles
3 teaspoon coconut oil --for garnishing---
1/4 coconut; grated
4 green chiles



Directions: How to Cook Carrot Poduthuval (Dry Carrot Curry)

Scrape and cut carrots into 1 cm. pieces. Wash and set aside. Heat oil and add mustard seeds, black gram dal and red chilies. When brown, add carrots, turmeric, salt and sugar. Cook on a low fire till done. Run grated coconut and green chilies in a mixie for a minute and add to the cooked vegetables. Mix well and serve hot.

i made this last night to use up some ageing (but stil l good) carrots. delicious. i think i fried the mustard seeds just a little too long as i was opening the urad dal packet, so there was a little smoky note in there, but still excellent. recommended (although reducing the number of green chillies might be recommended if you don't like things that spicy)

Hi all, Please dont wash veges after you cut them. Its not at all good and dont waste the water in which you boil them. That water contains vitamins from the veges. Otherwise this recipe is really good :)
