Mixed Vegetable Curry Recipe

Category: Curries
Rating: 2.95
Servings: 6

Ingredients

1/2 lb turnips
1/2 lb potatoes
1/2 lb carrots
1/2 lb tomatoes
2 bunches fenugreek leaves
1/2 lb onions
1 cup oil
2 teaspoon garlic and ginger ground
1 together
2 teaspoon ground fresh green chillies
2 teaspoon salt

Directions: How to Cook Mixed Vegetable Curry

Wash all the vegetables, peel as necessary, cut into pieces, and set aside.

Heat oil and fry all the vegetables until they are light brown.

Chop onions finely and mix together with all the ground spices.

Add onions and spices to the vegetables and fry together until light brown. Add salt.

Add 1/2 cup hot water and cook over slow fire until vegetables are done and thick gravy forms. Take care not to overcook or stir too vigourously to avoid mashing the vegetables.

What is your idea of a "bunch" of fenugreek leaves? Your bunch might be one ounce. My bunch might be a pound, or a kilogram. This is ambiguous. You should be specific and say "nn ounces (or grams) of fresh (or dried) fenugreek leaves".

You say "2 teaspoon garlic and ginger ground". What do you mean? Do you mean one teaspoon of ground garlic and one teaspoon of ground ginger? Do you mean 2 teaspoons of ground garlic and 2 teaspoons of ground ginger? Do you mean that only the ginger should be ground? What about the garlic? Chopped? Minced? This is also ambiguous.

What is "1 together"?

I'm not really accustomed to grinding fresh green chilis. Are you sure? Do you mean that they should be ground to a paste? How about finely chopped? Minced?

As another comment said, there are no spices in the ingredient list - ground or otherwise.

You describe frying the vegetables until light brown, then adding fresh onions and frying them (with the vegetables), until light brown. By this time, most of the vegetables will be overcooked or burned.

Have you ever made this recipe?
